Orecchiette 400 Gramme(s)
Broccoli 500 Gramme(s) in small bouquets
anchovies in oil 6 Unité(s) Tenderloin
garlic 2 Unité(s) cloves
breadcrumbs 40 Gramme(s)
olive oil 5 Centilitre(s)
Dry chilli pepper 1 Unité(s) Optional,
salt 1 Pincée(s)

Steps

Brown the breadcrumbs for 3 min in 1 cl of oil, to a wheat colour. Set aside.
Bring the water to a boil. Add the broccoli 4 min, then the orecchiette. Cook together until al dente.
In a frying pan, melt garlic and anchovies for 2 min in the remaining oil, with the chili pepper. They should melt, not grill.
Drain pasta and broccoli, keeping a glass of water. Pour into the pan, mix for 1 min, crush the bouquets a little.
Serve, crispy breadcrumbs at the last moment.

Notes

Anchovies melt in oil: you don’t see them anymore, you taste them. Salt the pasta water a little less than usual.
